These cookies are delicious and wonderful for the holidays. The recipe is fairly simple too.
Mexican Wedding Cookies
2 c. unsalted butter at room temperature
1 c. powdered sugar, plus more for coating cookies
2 tsp. vanilla extract
3 c. all-purpose flour
2c. chopped pecans, finely chopped
Using an electric mixer, cream butter and powdered sugar at low speed until smooth. Beat in vanilla. At low speed, gradually add four. Mix in pecans with a spatula. With floured hands, roll onto 1-inch balls and place on a cookie sheet. Bake for 40 minutes and turn pan around after 20 minutes. When cool enough to handle but still warm, roll the cookie in additional powdered sugar to coat.
