What's Cooking at Nevada Federal

Party Cheese Cakes

Our employee who contributed this recipe tells us that it was given to her by a friend when she lived in England. It has become a family favorite in her house, especially at Christmas.


24 vanilla wafers
2 (8 oz.) pkgs. cream cheese, softened
¾ c. sugar
2 eggs
1 T. lemon juice
1 tsp. vanilla
1 (22-oz.) can cherry pie filling

Place paper liners in muffin tins and place one vanilla wafer in the bottom of each. Combine cream cheese, sugar, eggs, lemon juice and vanilla. Beat with mixer until smooth and creamy. Fill each cup approximately 2/3 full. Bake at 350 degrees for 15 to 20 minutes. Cool thoroughly or refrigerate overnight. Spoon cherry pie fillilng on top when serving.
